Cannoli Cream and Berries
Cannoli. One of the world’s most awesome creations. Really. I mean who invented this fantastic face friendly dessert?! Truly, a work of art. The crispy outer shell with the soft cream center. The best ones are dipped in chocolate. *Drools*
I think of cannoli around holiday time, near Thanksgiving or Christmas. That is when everyone needs to let out their pants anyway.
In the summer, when I see them behind a sneeze guard, my mouth waters for them, but I don’t want the heaviness of the shell.
Thus, cannoli cream and berries was birthed. –OH YEAH!
Can you feel my enthusiasm?!
This recipe can be made year round and makes “cheat day” that much sweeter! Fruit doesn’t count, right?
I love that it’s super simple to make and can be portioned in to large or small quantities!
I like making a little bit for myself as a quick dessert, or in larger quantities when I want to feed friends!
The creamy, sweetened ricotta is a refreshing after meal goodie. The berries contrast well and add a sweet and tangy balance to the dish.
- 2 cups whole milk ricotta cheese
- 1-1½ cups of powdered sugar
- ½ teaspoon of pure vanilla extract
- ⅛ teaspoon of cinnamon (more if needed)
- ¼ cup Raspberries
- ¼ cup Blueberries
- 7-10 Sliced Strawberries
- Mix all of the cannoli ingredients together. It should be sweet, but not overtly so. Then add berries on top! That's it!
The recipe is super simple and takes little to no time at all. Test it out and comment below with your success!!
